Recipe below: INGREDIENTS One pot chicken with tomatoes and turmeric: 4 Chicken Maryland’s 1 large carrot, diced 1 celery stick, diced 1 brown onion, diced 4 cloves of garlic, minced 1 tsp of turmeric 3 truss tomatoes or 1 tin of plum tomatoes 1 tbsp of tomato paste 1 cup risoni 750ml chicken stock Vegetable oil Salt and pepper 1⁄4 bunch fresh parsley METHOD 1.
Preheat the oven to 180 degrees Celsius 2. In a large oven proof pot, heat some vegetable oil over a medium-high heat and fry the chicken skin side down until golden. 3.
Turn the chicken then add in the carrot, celery and onion. Cook for a couple of minutes before adding the garlic and cook for another minute. 4.
Sprinkle over the turmeric then add the tomato paste and cook for a minute before adding the stock. 5. Add the risoni, season generously with salt pepper then transfer to the oven and cook for 15-20 minutes until the risoni is cooked.
Then serve with a garnish of freshly chopped parsley..
