Taco Mike features an array of Hispanic-inspired food items including, burritos, quesadillas and tacos filled with brisket, chicken, steak, rice, beans, cheese, pico de gallo, a homemade sauce and more, Morgan said.“We keep our menu simple; it’s just very simple,” said co-owner Michael Morgan, who furnished and equipped each truck. “All our meat is fresh; nothing is frozen.
”Patrons can order walking tacos in regular-sized chip bags or in smaller cups, called AJ Cups, according to Heather Morgan.Taco Mike, with the help of Jerica Neely, offers a “bring your own bag” service welcoming large bags of chips filled with toppings, she said.“People are loving that (option),” Heather Morgan said.
Similarly, Heza Teriyaki offers a simplified Asian-inspired menu with meat options like chicken, steak and shrimp paired with fried or white rice and other items like egg rolls, she said.Heza Teriyaki, operated by Emily Hall and Kathy Cox, was added to the business two years ago, Heather Morgan said.All sauces, including teriyaki and Yum-Yum, are homemade as well.

(Larissa Beriswill – The Morning Journal)Since 2015, Taco Mike has garnered a loyal following since its start appearing part-time at events around the county, Michael Morgan said.“It’s not easy to have a truck in one spot four days a week,” he said.
“We have 9,000 people who are following us.“That didn’t just happen.”The small business also has created a valuable partnership with Advance Auto Parts in Elyria, Heather Morgan said, as it’s the main location for business during the week.
Taco Mike also attends around five or six events each year, including the Lorain County Fair and the Elyria Apple Festival, she said.“It’s been wonderful,” said Heather Morgan.Michael Morgan added: “We’ve worked hard to get where we are; we worked so many years together.
