“There are seven gingerbread houses and none of them are similar,” explained Dynia Mariano, baking and dining room instructor at the college’s Culinary School in Glens Falls. The students “had to create some type of vision and express themselves in the form of gingerbread houses.” Each of the seven baking students spent the past five weeks learning all the confectionary tricks of the trade in order to build their candied creations completely from scratch.
“How to cast sugar, pulled sugar; how to work with chocolate in other forms, how to mold them and temper them. We also had some lessons in fruit — how to create fruit leather,” Mariano said. “They had to put it together within that five weeks.
” “Not a lot of chefs want to take on the endeavor of going into pastry arts,” Mariano said. “So, we’re trying to hope to engage a newer generation to get into pastry arts and really start getting more invested into baking so that we can see a lot more up here even into Saratoga.” Seasoned is open from 11:30 a.

The decadent domiciles will be on display in the dining room at Seasoned, the college’s student-run restaurant located at 14 Hudson Ave., until Dec. 13.
Looky-loos can purchase tokens for $1 each and use them to vote for their favorite. First-, second- and third-place winners will be awarded medals. The money raised will go towards a special holiday luncheon for the students to enjoy.
Raffle tickets will also be offered at $5 each to be entered to win a 12-inch gingerbread carousel created by the entire class. Funds from those sales will be applied to next year’s special trends class project. The drawing for the class-created gingerbread carousel will be held at 1 p.
m. Dec. 13.
