Eggs are one of the best things to eat for breakfast to give you the best start to your day. While they can be cooked in many different ways, scrambled eggs are probably one of the least hard and time-consuming options. However, when cooking scrambled eggs, many people can’t seem to avoid getting hard and rubbery results.
To avoid this, Jen Eddins of the fitness and food blog Peanut Butter Runner has shared her “secret ingredient” she recommends using in the recipe . She said: “If you’ve been watching my Instagram stories, you probably know what the secret ingredient is. If not it’s cottage cheese! “Trust me when I say that adding cottage cheese to your scrambled eggs makes them extra fluffy and tasty - a little cheesy and perfectly salty.
” She noted that it’s as easy as adding “a big forkful of whole milk cottage cheese” to your cracked eggs and then beating with the fork to combine. After, you just want to melt some salted butter in a pan but make sure to keep it on low heat so that the butter doesn’t brown or burn. Then, it’s time to add in the eggs, but be gentle with them.
Eggs are delicate, so don’t start stirring vigorously. Instead, gently stir them with a spatula. As you gently stir, you’ll see the eggs starting to set.
You’re almost there at this point. The key is not to let the eggs brown anywhere. That results in “weird tasting, dry scrambled eggs”.
Jen noted: “The only time a little brown is acceptable is when you are frying an egg (again in lots of salted butter).” Right before you think your eggs are done cooking, take them off the heat. They will continue to cook after you remove them from the heat.
Jen added: “Enjoy immediately. Again, trust me on the cottage cheese in your scrambled eggs.”.
