Salmon, a healthy and delicious fish widely enjoyed in UK households, offers endless cooking possibilities. It is a nutrient-rich, protein-packed fish high in healthy unsaturated fats , associated with lowering cholesterol, and low in saturated fats. Though it is a staple on many people's shopping lists, finding tasty and interesting recipes can prove challenging.

British cooking icon Nigella Lawson has shared one of her go-to salmon recipes, branded "excellent" and "absolutely delicious" by fellow cooking enthusiasts. Speaking of her tarragon salmon recipe , Nigella said: "I like my salmon almost sushi-coral and cooked for two minutes a side..



.the retro sauce is super comforting both for its speed and its fragrant creaminess." The recipe is faster to make than most due to the speedy cooking method, but Nigella suggests a slightly different approach if you prefer the fish more thoroughly cooked.

Cook the fish for three to four minutes a side, adding water to the vermouth mix as it will evaporate more the longer it is cooked. All in all, the dish takes less than 10 minutes to make. Ingredients 60ml dry white vermouth One teaspoon dried tarragon One teaspoon dried chives One teaspoon unsalted butter Two teaspoons garlic-infused olive oil Two salmon fillets (preferably Alaskan, organic or ASC-certified Scottish salmon) 60ml double cream Maldon sea salt flakes (to taste) Pepper (to taste) One teaspoon chopped fresh tarragon (or chives or watercress - to serve) First, combine the vermouth and dried herbs in a cup and set aside for later while cooking the salmon.

Take a small frying pan large enough to hold the two salmon fillets snugly and add the butter and garlic oil. Add the salmon when the butter begins to sizzle and cook, hump-side down, for two minutes. Flip the salmon fillets, add the vermouth with its herbs and cook for another two minutes once it comes to a boil.

Transfer the fish fillets to a couple of plates and then stir the cream into the pan, seasoning to taste. Add chopped fresh tarragon or chives to the pan and pour the pale, herb-flecked sauce over the salmon pieces if desired..
