
A complicated list of ingredients is not necessary to make a delicious meal, particularly when it comes to pasta. Many classic pasta recipes focus on a few core flavours, like chilli, garlic and olive oil used for 'spaghetti aglio e olio' , and Prue Leith's spaghetti recipe is very similar. Sharing a dish from the Great British Budget Menu, the Great British Bake Off judge said: "This cheap sardine pasta recipe is quick and delicious, and it's packed with minerals, vitamins, and omega-3 oils.
" The meal has just nine ingredients, including a silky spaghetti base topped with curly green kale and salty tinned sardines. According to BBC Good Food, sardines are small but mighty as they are low in saturated fat and calories but high in protein. Ingredients 300g spaghetti Two tbsp olive oil 2 x 120g tin sardines in oil (preferably olive oil) One onion, chopped Salt and black pepper One garlic clove, finely sliced 1β2 tsp chilli flakes 150β200g curly kale, chopped One lemon, juice only First, cook the spaghetti in a large saucepan of boiling salted water per packet instructions.
Meanwhile, heat a large frying pan over a medium heat on the hob. Add one tablespoon of oil and, once hot, the onion and a pinch of salt. Fry gently until the onion is soft and golden brown.
Once soft, add the garlic and chilli flakes and cook for two more minutes. Open the tin of sardines and break the fish into bite-sized pieces, discarding any large bones. Add the pieces to the onions with the remaining oil.
Heat through, then add the kale with three or four tablespoons of the spaghetti cooking water. Stir to mix well, cover the frying pan with a lid or foil, and cook for three to four minutes. Remove the lid and stir until the kale is completely soft then drain the spaghetti, reserving a little of the cooking water.
Add the spaghetti to the sauce in the frying pan, followed by the freshly squeezed lemon juice. Mix through to coat the spaghetti (you may need to add a little of the cooking water to loosen your sauce). Finally, taste and season with salt and black pepper then serve immediately.
