Porridge is enjoyed by millions of Brits and is loved as a quick and easy breakfast that can be made rather speedily. Many make their porridge in the microwave, adding things like fresh fruit and honey after heating it up.
Others make it on the stove, opting for a more creamy consistency. While porridge is normally enjoyed with something sweet like syrup, jam, sugar, bananas or berries, but this expert, who won the 2022 World Porridge Championships, says porridge should be the star of the show, not just a "vessel" for things like fruit and other sweet toppings. In an interview with The Guardian , Toby Wilson revealed how he makes his porridge with just three ingredients.
With no fruit or sweet additives, it might surprise you how he puts together what he calls the best bowl of porridge. Firstly, the porridge champ says that you shouldn't use regular rolled oats that you normally get in the supermarket. Instead, he uses whole-oat groats which he processes himself but you can swap this with shop-bought steel-cut oats, which are available online and in many health food stores.
A top tip here is to soak them overnight to speed things up. When it comes to cooking them, he says it takes a little longer, around 10 minutes, as opposed to the couple of minutes many of us are used to. And to do this, he doesn't use milk.
He uses Scottish mineral water, which isn't available to everyone. However, tap water can be used, although it might slightly alter the flavour. And finally, for a serving for one person, Wilson adds a teaspoon of salt.
When it comes to measuring, there should be three parts water for one part porridge. So once you decide how much porridge you want, there should be three times as much water. To cook it, you simply place all of the ingredients in the pot, including salt, and leave it on medium to high heat for about ten minutes.
When the mixture starts to simmer, turn down the heat and stir it with a wooden spoon. When they are done, they should be fully cooked but have a slight bite to them. When it's time to eat it, Wilson simply tops it with butter and brown sugar.
