Cut the chicken wings in half Step 3. Pour some extra virgin olive oil in the pan Step 4. Add some salt and cook the chicken over medium/high heat until it is crispy Step 5.
Slice the chorizo and add it to the paella. Cook for 2-3 minutes Step 6. Add the snow peas and cook for 3 minutes Step 7.
Add the butter beans and cook for 3 minutes Step 8. Add the tomato and garlic and cook for 3-5 minutes Step 9. Season with a pinch of salt Step 10.
Add the smoky paprika and stir it quickly for 5-10 seconds Step 11. Add 1.2 litres of chicken stock to the pan so it is evenly distributed Step 12.
Pour the saffron into the pan Step 13. Add the rice and spread it well through the pan. Adjust salt Step 14.
Cook the paella for 10-12 minutes over medium heat Step 15. Reduce the heat to low and cook for 6-8 minutes Step 16. Turn off the heat and cover with a tea towel.
Let it rest for 5 minutes.
