New Spanish Restaurant To Open At 1 Hotel Seattle

La Loba, opening next month on Terry Avenue, comes from an acclaimed chef.

Employees of La Loba are getting ready to open the new Spanish concept next month on the north side of the city. La Loba, coming to 2125 Terry Avenue, is a new Spanish restaurant headed by Barcelona chef Oscar Amador Edo . He is known for being a James Beard-nominated chef, cooking at restaurants in Las Vegas, including EDO Tapas & Wine and Anima Las Vegas.

La Loba is going in the 1 Hotel Seattle building, the 17-story hotel near the Cascade neighborhood. “A modern take on Barcelona cuisine, blending its rich culinary traditions with influences from Japan, the Mediterranean, and beyond,” said 1 Hotels’ website. In a profile on Edo from 1 Hotels, Edo said his vision for La Loba was “to bring the soul of Spanish cuisine to the Pacific Northwest.



” Items on the menu will include Salmon Candy Smoked Montadito, truffled Beecher cheese, and striploin carpaccio, along with fresh oysters and other fish. The cocktails will be hand-crafted, many of them complimenting the Spanish-style dishes, and many different wines are being imported as well. Roberto Liendo , who is a managing partner at EDO Tapas & Wine, is also part of the restaurant.

What Now Seattle has reached out to Liendo to learn more about the project. The hours of operation will be 3 p.m.

to 10 p.m. Tuesday through Saturday.
