Mary Berry’s double cheese pasta bake takes only 15 minutes to make from scratch

It can be difficult to decide what to cook for dinner, especially if you are cooking for a group of people, but this utterly delicious pasta takes almost no time to make. Mary Berry’s double cheese pasta bake is the ultimate comfort food topped with two different cheeses with a variety of mushrooms to give it an earthy taste. In her cookbook ‘Family Sunday Lunches’, Mary wrote: “A great dish for vegetarians.

It’s easy to make ahead so you’ll just have to pop it in the oven to cook . “Then all you’ll need is a dressed salad to serve with it. Use a variety of mushrooms like oysters, shiitake, chestnut and button.



” It takes less than 10 minutes to prepare this tasty dish before it goes in the oven for five minutes which makes this recipe perfect for a quick and easy meal. How to make Mary Berry’s double cheese pasta 225g of penne pasta 500g of mixed mushrooms (thickly sliced) 175g of Parmesan cheese 175g of Gruyere cheese 50g of butter 50g of flour 300ml of milk One onion (roughly chopped) Two large cloves of garlic (crushed) 300ml of double cream One tablespoon of thyme Two tablespoons of olive oil Salt and pepper A 1.2 litre ovenproof dish To begin, salt a pan filled with water and bring it to a boil.

Add your chopped onion pieces and pasta, then leave it to cook until tender. Use the pasta packet instructions to determine how long the pasta will take. While the pasta is cooking, pour the two tablespoons of olive oil into a frying pan and let it heat up.

Once the pan is hot, add your chopped mushroom and cook on a high heat for three minutes. Next, add the garlic and cook for one more minute. To make the sauce, melt the butter in a separate saucepan.

Once melted add the flour and stir on a high heat for one minute. Slowly add the milk while continuing to stir until you have a smooth texture. Season the sauce with thyme and gradually add each of the cheeses to the sauce, then season with salt and pepper.

Pour in the cooked pasta, onion and mushrooms and tip into an ovenproof dish. Sprinkle the top of the pasta with any remaining cheese. Place in the oven on the grill setting for five minutes until you have a golden and bubbling topping.
