Super simple to make, all you need to do is separate the egg yolks from the egg whites, then fold the ingredients into the whipped egg white. Once the mixture is made with all the baking essentials, including almond extract, it can be ready in as little as 20 minutes in the oven. Place the egg whites in a large bowl and whisk "until they look like clouds". Slowly add the caster sugar, one tablespoon at a time, until the egg whites are stiff and glossy. Fold in the ground almonds, almond extract and chopped.
Then chill in the fridge for 30 minutes. Preheat the oven to 180C (160C fan/gas four). Place the icing sugar in a large bowl.
Using wet hands, shape the egg white mixture into 24 balls and coat in the icing sugar. Place on the baking trays, leaving space for the balls to spread. Bake in the oven for 20 minutes.
