Lasagne is a dish that is served weekly in homes around the UK. There are many ways to make a cracking lasagne , but according to some not-so-hidden Italian secrets , there’s one ingredient that knocks the flavour out of the park. It’s not a fancy cheese or an expensive meat .
It’s cinnamon. Food writer Judy Kim, writing for Delish , said it was her Italian grandmother’s secret to making the best lasagne she’s ever tasted. And it’s not just a sprinkle - they go heavy with it.
Judy wrote: "My grandma didn't keep track of how much she used to add, but we go heavy, with about 1 and a half teaspoons." Cinnamon is added directly into the ricotta mixture, giving the dish a warm and rich depth of flavour that’s hard to beat. Judy said that when they once forgot to add it, the whole family noticed something was missing, even if they couldn’t quite put their finger on what.
For those wanting to give it a try, a recipe shared on Food.com includes cinnamon in both the sauce and cheese mixture. Here's how to make it.
20ml olive oil 1.35kg minced meat (a mix of 900g beef and 450g pork works well) 1 medium onion, finely chopped 3 garlic cloves, minced 2 tsp Italian seasoning 1 tsp dried oregano 11⁄2 tsp sugar 1⁄2 tsp ground cinnamon 450g tomato sauce 2 tbsp tomato purée 450g ricotta or cottage cheese 2 eggs, beaten 1 tsp salt 1 tsp dried basil 1⁄2 tsp black pepper 2 tbsp chopped parsley 75g grated Parmesan 10–12 no-boil lasagne sheets 600g shredded mozzarella.
