Janet McCormick: Grab up local sweet corn while you can for this easy, tasty dish

If this season could have a fitting final act, this would be a fine one: elote, otherwise known as Mexican street corn. I’ve been angling to make this for a few months now, and without fail, missed the painfully short window that local sweet corn is in season. This year, the season seems to be stretching on and on, and I couldn’t be more pleased I finally made this dish happen.
