The chef and restaurateur combines the light, airy texture and the natural sweetness of ripe bananas for a real crowd-pleaser. This recipe shared on his official website serves four and takes only 20 minutes to make from start to finish. Jamie explained: “Store-cupboard staple oats add a lovely creamy texture to these fluffy pancakes. And ripe bananas add so much flavour to the story – they're almost toffee-like!” Ingredients Two ripe bananas 50g porridge oats 250ml semi-skimmed milk 250g self-raising flour One teaspoon vanilla extract Olive oil Four heaped teaspoons of your favourite jam Nut butter, to serve A handful of defrosted frozen fruit, to serve Method Start by peeling one banana and blending it in a food processor until it becomes smooth.



Add the oats, milk, flour, vanilla extract, and a small pinch of sea salt, then blend everything together again until the mixture is smooth and well combined. Peel and slice the second banana into thin pieces. Next, place a large non-stick frying pan over medium heat.

Once it’s hot, add a teaspoon of oil. Working in small batches, spoon the batter into the pan, topping each portion with a few slices of banana, gently pressing them into the batter. Cook for two to three minutes until the edges begin to bubble, and the pancakes are lightly golden, then flip them over and cook for another minute on the other side.

While the pancakes cook, warm the jam in a small saucepan or microwave with a teaspoon of water to make it more pourable. Once the pancakes are ready, serve them topped with a spoonful of nut butter, a drizzle of the warmed jam, and a handful of defrosted fruit for extra flavour..
