This simple yet moreish chocolate cake is the ultimate melt-in-your-mouth experience, with a rich flavour that’ll be hit with chocolate fans. The recipe calls for just a handful of ingredients, including dark chocolate, butter, and eggs , making it both accessible and impressive. With just 15 minutes in the oven, you’ll be left with a fudgy, gooey centre and a slightly crisp outer layer.

Break the chocolate into pieces and place it in a large heatproof bowl. Add the butter and melt them together over a pot of gently simmering water, stirring frequently, ensuring the bowl doesn’t touch the water. Once melted, set the bowl aside to cool slightly.
Separate the eggs, placing the yolks into the bowl of a stand mixer with the caster sugar (or into a large mixing bowl if using a hand whisk). Whisk for about two minutes, or until the mixture becomes pale and fluffy. Then, stir in the melted chocolate.
In a separate bowl, beat the egg whites with a pinch of sea salt until stiff peaks form. Using the stand mixer or hand whisk, carefully fold the beaten egg whites into the chocolate mixture in batches. Afterward, sift the cocoa powder over the mixture and fold it in gently.
Next, pour the batter into a greased 25cm x 30cm roasting tray, or spread it evenly on a 30cm x 40cm baking tray lined with greaseproof paper, depending on your preference. Bake for exactly 15 minutes, or until the cake is slightly springy to the touch and still soft in the center. Remove it from the oven and serve with your preferred decorations or some whipped cream.
