James Martin revealed a "lighter" Boxing Day dish that is bound to become a family favourite. Known for his inventive recipes , the 52-year-old culinary genius has recommended potatoes and chicken waffles. Speaking to OK! James Martin said: "Potato waffles are very good with leftover bits of chicken [or turkey].
You dice up the chicken and your leftover bits, add to the waffle mixture plus the cooked potatoes, and cook in a waffle machine." The cook added: "To finish, just drizzle with a little bit of maple syrup." For those without a waffle machine, fear not, as the chef has come up with a large leftovers Christmas toastie.
Described as "ridiculously tasty", the toastie can be filled with leftover turkey, ham, cooked sausages, cranberry sauce, and more! Plus, the large Christmas toastie can feed up to eight people in as little as 25 minutes, which makes it an easy Boxing Day treat. Large leftovers Christmas toastie One oblong sourdough loaf 12 slices of ham 12 slices turkey Leftover cooked sausages 12 slices of brie One jar of cranberry sauce Any left overs (bacon and stuffing) One small bunch sage 50g butter 35g plain flour 400ml full-fat milk 400ml double cream Two tbsp grain mustard 400g Cheddar grated Salt and black pepper Method Heat the oven to 200C. Heat a pan to a medium heat, add the butter, when foaming whisk in the flour and cook out for two minutes.
Whisk in the milk, cream, and two-thirds of the grated cheese, when bubbling take off the heat and season with black pepper. Cut the bread from the top to the bottom, 90 percent through and 1cm slices apart, sit on a large rectangular piece of foil with a base of greaseproof paper. Spoon the sauce into each slice and fill with ham and sausages, cranberry sauce, turkey, brie, and sage, then spoon remaining sauce over the top and sprinkle on the cheese.
Place onto a tray lined with paper then pop the oven and cook for 25 to 30 minutes..
