It consists of fresh tuna with marinated melons introducing bright, complex flavors with layers of ginger, lime, and ube. It was followed by a soup dish - egg chawanmushi paired with shrimp, mushrooms, and floral accents that offered a balanced richness. It presented a beautiful mix of colors.
While the bread-and-butter trio provided a creative, flavorful pause. The fourth course was one of the crowd favorites that featured steamed Atlantic halibut. A dinner highlight was an Australian wagyu delivered with bold umami depth, paired with fermented vegetable paste.
The team wrapped up the dining experience with a refreshing blend of tartness and sweetness. Each course showcased by Chef Boutwood and his HELM team was a meticulous artistry and flavor harmony, successfully bringing out the premium essence of IQOS.
