Brownies are a delicious sweet treat, often made with a rich, fudgy texture, packed full of chocolate chips. However, a full batch requires time and lots of ingredients, which isn’t great if you’re after something quick. I’ve been making this microwave brownie recipe for years; they require ingredients you probably already have, and the batter makes four.

This means you can share them around or place them in the fridge for the following days. 70ml water 40ml sunflower oil 35g flour 70g caster sugar 15g cocoa powder 50g white chocolate chips, optional Start by adding all of the ingredients to a bowl, minus the chocolate chips, making sure to whisk them together until combined and smooth. Once smooth, stir in the chocolate chips.



You can use white chips, milk or dark. I like white so that the brownie isn’t too rich or strong. Next, separate the batter between four small ramekins; it should be about three quarters full with the mixture.

Microwave them for 40 seconds, or a little longer if you prefer more of a cake consistency. Serve with a scoop of vanilla ice cream or simply indulge in them on their own. If you have ramekins left with batter, cover with clingfilm or tin foil and place them in the fridge to use the following day.
