We love pasta in my house and we have it every week. We have a couple of go-to recipes that are quick and easy to make after a busy day, but finding an easy macaroni cheese where you don't have to make a roux or sauce is hard. That was until I stumbled across a great one-pan hack from a TikToker who makes all kinds of delicious family meals.
Elli Tamar is a sonographer who also shares her food ideas on TikTok . She specialises in "easy recipes for busy parents" which has helped gain her more thank 250,000 followers and more than 10million likes on her videos. Elli's " one pot broccoli mac and cheese " looked so easy and tasty that I thought I would give it a go.
I used penne pasta because that is what I had, but I would use a smaller shape next time so it cooks faster. Elli also reccomended that when chopping her broccoli for the recipe , people should keep the stem and grate it to add it. She said: "Don't throw it away.
It's delicious too and your kids won't notice it if you grate it." There is hardly any prep work aside from chopping the onion and broccoli, which is great if you don't want to spend ages in the kitchen. And once the onions have softened, you just throw everything in the pan and stir every now and then.
The milk thickens the sauce while cooking the pasta and it is so low effort. But what did it taste like? It was creamy and delicious with a lovely fresh flavour because of the broccoli, which really enhanced the dish. This is a versatile recipe , as I can see myself adding other vegetables in the future, and this will definitely become a favourite in our house.
Ingredients Olive oil One small onion, grated or finely diced One head of fresh broccoli Two cups of any small-shaped pasta Vegetable stock Milk Handful of grated cheese (more if needed) Minced garlic Salt and pepper for seasoning Dash of cream Method Fry your diced onion in olive oil for a few minutes until soft and transparent. While that is frying on a low heat, finely dice the head of fresh broccoli and Elli suggests grating the stem. Add the broccoli to the pan for five minutes before adding two cups of any small-shaped pasta and fry for another two minutes.
Then add your garlic, as much as is to your taste, salt, pepper and vegetable stock. Cover with half milk and half water (or stock, if your stock is in liquid form), Elli said: "As long as the pasta is just slightly submerged the exact amount doesn't matter." Simmer on a gentle heat and stir occasionally until all the liquid has been absorbed and the pasta is cooked.
Elli says you may need to add a little extra water during the cooking process to ensure the pasta is cooked. At the end of the cooking, add a good handful of grated cheese of your choice, although Elli uses cheddar. Once cooked, add a dash of cream, or you can also use Greek yoghurt, cream cheese, cottage cheese or ricotta.
Serve straight away and enjoy..
