Take your standard fried egg breakfast to another level by cooking it with one simple yet delicious ingredient.

Eggs are a perfect way to start your days as their versatile and protein-rich fried eggs seem to be a favourite for many. However, if you’re having fried eggs regularly, you may already know they can get boring. But you don’t need much to reignite your love for eating fried eggs.

The flavour boost you need could be sitting in your fridge or kitchen cupboard already. While they can be simple and delicious on their own, fried eggs can be a blank canvas to showcase new flavours and ingredients with ease. Cooking experts at Foodie recommend adding pesto to the pan when frying your eggs.

They said: “Frying eggs in pesto gives them a much welcomed herby burst of flavour. “This simple ingredient also replaces the oil or butter you typically fry an egg in, while also allowing for the bright, green freshness of its herbal components to come through.” They claimed that the fresh herbs in pesto are an “easy way to elevate fried eggs”.

Pesto is a herby mixture made from toasted pine nuts, fresh basil, Parmesan cheese, garlic, and olive oil. The basil and rich ingredients create a bright green mixture traditionally served over pasta or meat. When used in the correction ratio, the nuttiness of the pine nuts and salty Parmesan perfectly balance the zingy garlic and basil to make the ideal accompaniment to a rich and fatty fried egg.

To make the best pesto eggs, cook everything on a low heat. If the heat is too high, your pesto will burn and dry out. On a low heat in a large fry pan, heat two to three tablespoons of pesto in a pan.

When the pesto is slightly sizzling, crack the eggs in and leave to cook on a low heat. Using a spoon, scoop up the hot oil from the pesto and drizzle over the egg whites until they are puffed, bubbly and cooked. Make sure the oil does not touch the egg yolk, or it will cook it.

It should take about four to five minutes. Season the egg yolks with a pinch of salt and enjoy on some sourdough..
