Easy Vegan Banana Coconut Pudding

What you need: For the pudding: 1⁄2 cup canned full-fat coconut milk 1⁄2 cup cashews, soaked 3 tablespoons maple syrup 1⁄2 banana 1 teaspoon vanilla extract 1⁄2 tablespoons ground flax seeds 1 teaspoon chia seeds 1⁄4 teaspoon ground turmeric 1⁄4 teaspoon salt To assemble: 16 vegan wafer cookies 11⁄2 bananas, sliced 1 cup plain coconut yogurt What you do: For the pudding, in a high-speed blender , add all ingredients and blend until smooth.

Let sit 5 to 10 minutes, or until thickened. To assemble, into 2 serving glasses, layer cookies, pudding, banana slices, and yogurt. Let sit 10 to 15 minutes, or until cookies soften slightly, and then enjoy.
