Easy chicken noodle soup recipe is perfect 'comfort food' in winter weather

There's nothing like a hot bowl of soup to keep you cosy in cold weather. The winter weather is well and truly here, with some parts of the UK facing snow and other areas battered by lashings of rain and high winds. No matter where you live, the weather hasn't been great this week, and many of us are desperately seeking the kind of warm comfort that can only come from some piping hot wintery food .

And if you're looking for inspiration on what to rustle up that will warm your bones, then you're in luck as we have the perfect recipe for you - a delicious and comforting chicken noodle soup. Easy to make in under an hour, the soup is hearty and filling, and even comes with a spicy kick to really turn up the heat. Shared on TikTok by chef Dwight Smith, the recipe technically uses pasta instead of noodles, but you could swap the alternative carb out for the original if you'd rather go traditional.



The recipe also includes one scotch bonnet chilli for some extra heat, but you could leave this out if you're sensitive to spice. Ingredients 3 tablespoons butter 1 large carrot - diced 1 large onion - diced 2-3 stalks celery - diced 6 cloves garlic - chopped 4 chicken breasts - skinless 2 tablespoons dry jerk spice or cajun 3 litres of chicken stock or broth 2 sprigs thyme 2 bay leaf 1 tablespoon chopped parsley Scotch bonnet Salt and pepper to taste 2 tablespoons parsley - chopped 2 tablespoons parmesan - grated Method Dwight began by seasoning his chicken on both sides before searing it off in a pan with some oil. He then added them to a large pot along with the chicken stock on a medium heat.

Once the liquid begins to boil, he takes turns the heat off and allows the pot to cool. In a separate pot, he then melts the butter on medium heat before sweating off all his vegetables for a few minutes. Next, he adds the garlic and continues to sweat for another few minutes, and then throws in the thyme, bay leaves, and scotch bonnet.

He then pours in the chicken stock, but keeps the chicken breasts separate for the time being. While the broth is simmering, Dwight cooks his pasta - or noodles - in a separate pot. He then shreds the chicken by hand, and once the pasta is cooked, he adds both to the broth and stirs to ensure it's well mixed.

Then simply taste for seasoning and finish with parsley and parmesan cheese. Commenters on the post were eager to try out the soup themselves, with some even recommending other additions to make it even more comforting, including potatoes or a tin of tomatoes. One person said: "Wow, coming from a Mexican boy, this is really good soup," and another added: "Had to guess on the amount of pasta.
