Shared by award-winning nutritionist Rhiannon Lambert (BSc, MSc, RNutr), the simple "superfood salad " recipe will not only taste good, it'll be good for you too. During the sunny weather, it's the ideal time to whip together something tasty, quick, and healthy. Super easy to put together in around a minute, there's no cooking skill – or cooking at all – that's needed.
Once you have all the ingredients – blackberries, spinach, feta, walnuts, olive oil and raspberry vinegar – you're ready to go. The blackberries are said to be "packed with essential vitamins and fibre, and offer a wide range of health benefits". Serves: One Ingredients: 200g fresh blackberries 150g fresh spinach leaves 50g feta cheese 20g walnuts 20ml raspberry vinegar 10ml olive oil 1.
Lay the spinach leaves on a plate or bowl. 2. Arrange the blackberries, crumbled feta cheese and walnut pieces on top of the spinach.
3. Mix the raspberry vinegar and oil in a bowl and drizzle on top of the salad. Enjoy! Nutritionist Rhiannon said: "Enjoying British berries when they’re at their freshest not only enhances their flavour but ensures we benefit from their peak nutritional value.
" Blueberries, in particular, have "brain-boosting properties" because of their polyphenol content. Blueberries are best rinsed with water just before using them for a recipe ; they should not, however, be rinsed if you plan on storing them. This is because moist blueberries stored in the fridge are more likely to go off more quickly.
