Even though it's almost spring and the weather is warming up, you still can't really beat a nice bowl of soup for lunch. Easy, quick and delicious, one of the best things about soup is how versatile it is, with so many flavours to choose from. A classic creamy tomato is always a good idea, especially when paired with a cheese toastie.

But instead of grabbing a tin from the cupboard, why not try your hand at making it from scratch? If you're in need of a recipe, former Strictly and Love Island star Zara McDermott shared her creation on TikTok, with fans hailing it as 'elite'. This creamy tomato soup involves minimal prep - all you need to do is chop and roast some veggies before blending them up to perfection. Tomatoes are rich in antioxidants including one very important one called lycopene.

This has been linked to many health benefits, including reduced risk of heart disease and cancer, according to the pros at Healthline . Fans in the comments section were full of praise for the recipe, with one writing: "Love a good tomato soup, you seem like such a good cook." Another said: "I had this the other day it was elite.

" Here's how to make this recipe at home, which serves four. Ingredients 1kg tomatoes Two red peppers Bulb of garlic Olive oil Seasonings of your choice - for example, basil, oregano and thyme Salt and pepper 200ml chicken stock One tbsp creme fraiche Two tbsp single cream, plus extra for drizzling Bunch of fresh parsley Method Firstly, set your oven to preheat at 180C while you get the vegetables ready. Quarter the tomatoes, slice the red peppers and remove the top from the garlic bulb.

Next, take a baking tray and arrange your prepared vegetables on it. Drizzle over some olive oil and sprinkle a teaspoon of each seasoning. Season with salt and pepper, then give everything a thorough mix.

Roast the vegetables in the preheated oven for approximately an hour, stirring halfway through to prevent burning. After roasting, transfer the vegetables to a blender, adding the stock, creme fraiche and cream. Blend until smooth before serving in bowls.

Finish off with a swirl of extra cream, a sprinkling of fresh parsley and additional salt and pepper to taste..
