Classic roast lamb will cook perfectly in air fryer with 'easy' Easter lunch recipe

There's nothing more delicious than a roast lamb served at Easter, and you can free up valuable oven space by cooking it in the air fryer.

Easter often brings families together around a beautifully set table, and one dish that consistently takes center stage is the roast lamb. This tender, flavourful cut is a long-standing tradition and is often associated with springtime, as it’s the time of year when lambs are born. Whether it's for a large family gathering or an intimate dinner, a leg of lamb roasted to perfection and served with mint sauce makes a stunning centerpiece for your Easter feast.

While roasting a lamb is fairly straightforward, it does require ample oven space which can be tricky if you have sides such as roast potatoes and carrots needing cooked. One recipe from Good Food promises perfectly cooked lamb in the air fryer and served with crispy parmesan potatoes. Crusted with oregano and garlic, the recipe states, "Make this easy air-fried lamb with parmesan-coated baby potatoes for a spring supper.



It makes short work of preparing a classic Easter roast dinner." Ingredients 1-1.2kg bone-in half leg of lamb Two garlic cloves quartered lengthways Two tbsp olive oil One tbsp oregano leaves roughly chopped, plus a sprig to serve One lemon zested and juiced, plus slices to serve 750g baby new potatoes Two tbsp pecorino or parmesan finely grated Method Take the lamb out of the fridge 30 minutes before cooking.

Using a sharp knife, make incisions in the flesh and slide in the garlic slivers. Drizzle a little of the oil on the lamb then season with salt and pepper, and sprinkle with the chopped oregano, rubbing in well. Heat the air fryer to 200C.

Put the lamb in the air fryer basket and pour over half the lemon juice. Toss the potatoes with the remaining oil and season well. Scatter the potatoes around the lamb.

Air fry for 15 minutes then reduce the heat to 180C and cook for a further 45 minutes, turning the lamb halfway through. Transfer the lamb to a warm plate and pour over the remaining lemon juice. Cover with foil and leave to rest for 10 minutes.

Meanwhile, sprinkle the parmesan cheese and lemon zest over the potatoes and toss well. Air fry for a further five to eight minutes until crisp and golden. Pour any resting or remaining juices from the air fryer basket over the lamb.
