An interesting recipe by Cristina Ferrare - chef and New York Times Best-Selling Author - suggests people add lemon while marinating the chicken that will make the chicken "fall off the bone". Roasting a chicken until it is "literally falling off the bones" means the meat has become extremely tender due to prolonged cooking, causing the connective tissues and collagen to break down completely.
The host of Hallmark Channel’s Emmy-nominated Home and Family, Cristina’s recipe gives amazing results. According to the celebrity chef, one must take Dijon mustard, olive oil, lemon juice, and soy sauce to prepare the initial marinade for the chicken. Next, add the garlic and mix it well.
Carefully stuff the lemon rind into the chicken cavity and take some some fresh parsley, rosemary, and thyme. Next, start preparing the oven and preheat it to 350C. Wrap the tips of the drumsticks and wings in small pieces of foil and place the chicken in a heavy roasting pan.
Pour the marinade over the bird and top with chopped fresh or dry herbs. The chef has suggested using heavy-duty aluminum foil to cover the chicken (if you don’t have a lid for the roasting pan). Let the chicken roast for 90 minutes by keeping the foil on.
