Cooked beef (aluminum foil quarter pan) noted at 93 degrees Fahrenheit and cooked chicken (aluminum foil quarter pan) noted 87 degrees Fahrenheit both tightly covered and stored on counter surface to cool; operator reported that the pans had been stored on counter surface for approximately 30 minutes at time of inspection.
(Corrected: Aluminum lids removed from both pans and placed in walk-in cooler to cool by adequate method and to promote rapid cooling.) Cooked beef (chopped) noted at 73 degrees Fahrenheit and 86 degrees Fahrenheit noted stored in skillets (two) with tightly fitting lids stored on counter surface to cool; operator reported that the covered skillets had been stored on the counter for approximately 20 minutes at time of inspection. (Corrected: Lid removed and shallow skillet placed in walk-in cooler to allow the cooked beef to cool rapidly by adequate method.
) Cooked vegetables (mixed) noted at 103 degrees Fahrenheit recently cooked and stored in a covered pan on the counter to "cool." Operator stated the cooked vegetables had been stored on the counter for approximately 15 minutes at time of inspection. ) Cooked pork (stainless steel storage bin, half full) noted at 66 degrees Fahrenheit, cooked chicken (stainless steel storage container, half full) noted at 65 degrees Fahrenheit, and cooked (chopped) beef (stainless steel storage container, half full) noted at 69 degrees Fahrenheit all stored on counter surface. Operator stated the containers were removed from the walk-in cooler to prepare food for lunch service and stored on the counter for approximately 15 minutes. (Corrected: All three containers placed in walk-in cooler.
) Food items (container of flour, case of oil, bags of potatoes and onions) noted stored on floor surface in rear kitchen area. Food items (several cases of bottled/canned beverages and several cases/boxes/crates of tomatoes, cucumbers, and avocados). Case of napkins noted stored on floor below service counter.
Restroom lacks covered trash receptacle. Routine (second) inspection conducted. Hand wash sink operable.
Operator has probe/metal-stem type thermometer onsite as required. Permit posted. Allergen notice and choking poster both displayed.
Acceptable temperatures for reference: Raw beef 40 degrees Fahrenheit and raw chicken 41 degrees Fahrenheit stored in walk-in cooler. Discussed proper techniques and best practices for cooling, hot holding, and cold holding/storage. Operator provided link to review Subpart 14-1 of the New York state sanitary code.

Drain flies observed throughout the kitchen with the highest concentration around the floor drain for the three-bay sink. Missing a large portion of baseboard along the west wall of the main preparation area.

12). Food debris buildup is present on the handles of equipment throughout the facility. Significant mildew and food debris buildup observed under and around the dish machine.

Routine (second) inspection conducted. Discussed using time as public health control with operator. Establishment has a TPHC waiver to hold pizzas at service counter.
