For those with a sweet tooth looking to make healthier choices, there's an ice cream recipe that might just hit the spot without the guilt. Everyone deserves a treat now and then. And personal trainer Sean Casey, known on TikTok as @scaseyfitness, suggests a unique ice cream alternative that is high in protein and could provide even "creamier" results.
The idea of cottage cheese ice cream may raise eyebrows and challenge your dessert beliefs, but Sean gave it a go and was pleasantly surprised. To make this ice cream substitute, all you need are berries, honey, and cottage cheese. Simply blend them together and freeze for around 90 minutes.
Touted by its creator as "delicious, high-protein, healthy ice cream," Sean humorously remarked that he couldn't criticise it without giving it a go. He even planned to have his mum conduct a blind taste test to ensure a "fair, honest verdict" on this unconventional treat. After whipping up the ice cream, Sean and his mum gave it a taste test.
Sean admitted: "I'm actually pleasantly surprised. I did not have high hopes". His mum also found it "nice," expressing that she "liked it".
Sean confirmed: "This one passes the test." But some sitll had questions. In response to the video, one viewer queried: "Can you taste the cottage cheese? I Would love to try, but I hate cottage cheese".
However, others swore by the ingredient and said it can help to make desserts taste even "creamier". One said: "I hate cottage cheese (all cheese, actually), but I'll put it in a berry protein smoothie! Makes it creamier". Cottage cheese is naturally rich in casein protein, which contributes to a smooth and creamy texture when it’s blended thoroughly.
When incorporated into an ice cream mixture, it helps to create a dense and velvety consistency. The protein in cottage cheese can interfere with the formation of large ice crystals in the ice cream. Smaller ice crystals result in a creamier texture, making for a luxurious mouthfeel.
When blended, cottage cheese mixes well with other ingredients, helping to trap some air in the mixture. This contributes to a light yet creamy texture. What's more, around 100g of cottage cheese contains around 11–14 grams of protein.
