Adam Liaw’s strawberry and mascarpone parfait

Parfait can refer to a pâté-type arrangement of chicken livers, a French frozen custard or an arrangement of fruit, cream and (sometimes) sorbet or granita. This is more the latter. Ingredients 300g roughly chopped strawberries 1 tbsp honey 1 tsp balsamic vinegar 10 amaretti biscuits (or other similar almond biscuit) 300ml thickened cream 3⁄4 cup icing sugar mixture 1 tsp vanilla bean paste 200g mascarpone Method Combine the strawberries with the honey and balsamic vinegar.

Coarsely crush the biscuits. For the mascarpone cream, whip the cream, sugar and vanilla together until it forms soft peaks, then gently whisk through the mascarpone. In presentation glasses, layer the crushed biscuits, cream and strawberries, then repeat to create a layered parfait.
