Tomatoes are starting to come good now, but if you love a caprese salad, try this one for when tomatoes aren’t at their best. Ingredients 2 pieces soft mozzarella in whey 1⁄2 cup mixed olives, pitted and roughly chopped 3 tbsp extra virgin olive oil 1 tbsp red wine vinegar 1⁄4 tsp honey 1 tbsp finely shredded parsley Method Drain the mozzarella and cut into 1cm slices. Arrange on a serving plate.
Combine the olives, olive oil, vinegar, honey and parsley and mix to combine. Spoon over the mozzarella and serve..
